Fruits and Vegetables: Nature's Antioxidants
Disease is easier to prevent than it is to cure! Fresh fruits and vegetables are available to us all year and provide an array of phytonutrients - nutritional elements that work synergistically to support overall health. They are low in calories and high in fiber, they are Mother Natures’ gift of health to us.
Studies show how valuable fruits and vegetables are in providing a decreased risk of a host of chronic diseases, such as heart disease, stroke, cancer, and diabetes. The United States Department of Agriculture (USDA) recommends eating 7-13 servings of fruits and vegetables every day.
A new report by the U.S. Center for Disease Control states the following findings:
Adults:
Eat fruit less than 2 times per day 68%
Eat vegetables less than 3 times per day 74%
Meet minimal goal of 5 fruits and vegetables per day 11%.
Only 10% of High School Students meet the recommended minimal goal of eating 5 (five) fruits and vegetables per day.
If you are in one of these categories, how can you change? Be more creative with vegetables. Next time you cook whole grain spaghetti, cut some strips of kale or collard greens and drop into the pot in the last minute of cooking. Try juicing! It is a daily routine at our house. Carrots, celery, apples make great base, add any one of more of the following: spinach, kale, ginger, dark leafy greens and squeeze a fresh lemon into the mix for a tasty morning pick me up and go. It’s brain power for the kids, get in the habit and see how naturally energized your morning can be! Snack for later: kale with olive oil and a little sea salt in a wok, and you have a crispy healthy chip.
Preparation is key, have a healthy snack with you ready to eat: cut up cucumbers, carrots, celery, radishes. The risk of grabbing some junk food late morning or late afternoon is gone! Kids love it too, you’d be surprised! Get in the habit and you’ll feel start to feel more energized and bright.
